San Marcos Cake

A splendid montage of Genoise Sponge Cake, Mousse, Chantilly and Egg Yolks Sweet, make one of the most traditional and symbolics birthday cakes from Spain.

San Marcos Cake has its origin in Castilla y León (Spain) and dates back to the s. XII. It was elaborated for the first time in the Convent of San Marcos when Queen Doña Sancha de León founded a temple and hospital for Jacobean pilgrims. Currently a hostel.

Here I show a simple version of a San Marcos without the chocolate mousse. This traditional cake has two kinds of mouse, vanilla and chocolate and the yolk sweet on top. Covered with whipped cream and some roasted almonds. Just exquisite!
